Inagaki Raizaburou Takumi is a miso and pickle brewer based in Iida City, southern Nagano (Shinshu), delivering Shinshu miso slowly aged in wooden vats, pickles centered on nozawana (Japanese leaf mustard), and sugar-free, non-alcoholic amazake made only with rice koji. Drawing on the water and air of a land cradled between the Southern and Central Alps, and carefully chosen domestic ingredients, the brand ships fermented foods that feel nostalgic and gently nourishing across Japan.

A long-established brewery that has protected wooden-vat brewing for more than 100 years in Iida, southern Shinshu. The "Shinshu Miso" here has an exceptional aged aroma and depth — turning an everyday miso soup into a feast. The gentle sweetness of the "Amazake" made only from rice koji and the crisp "Nozawana Pickles" are also superb. The history of Inagaki Raizaburou Takumi dates back to 1908 (Meiji 41), when miso making began in southern Shinshu, the land of Iida. The climate of large temperature differences surrounded by mountains and pure water has been known as an environment suited to fermented food making — and the brand has walked alongside this land since founding.

After the war, the brand focused on Shinshu miso indispensable to the home table, while also putting energy into pickle making centered on nozawana, developing region-rooted craftsmanship as a brewer of miso, pickles, and amazake. Particular about ingredient origins and methods, the brand has cultivated products that accompany daily meals.

Today, through the directly operated "Inagaki Raizaburou Takumi Iida Main Store" and online shop, the brand delivers the flavors of southern Shinshu nationwide. At the store, visitors experience the appeal of fermented foods through miso warehouse tours and tastings, while the online shop proposes seasonal recommendations and gift sets.

At the miso factory next to the shop, traditional wooden vats are used to slowly age Shinshu miso. Through in-house koji and long-aging techniques, the brand produces miso with a balanced harmony of aroma and umami.

Starting with the signature "Nozawana Raizaburou-zuke," the lineup spans pickles using seasonal vegetables such as cucumber, eggplant, and daikon radish. The range pairs well with rice, sake, and tea time alike.

The amazake is brewed with only rice and rice koji, drawing out natural sweetness without added sugar. Safe to enjoy for children and seniors alike as non-alcoholic, it works warm or chilled and is also useful in sweet making.

Brewer-direct shop in a renovated 100+ year-old farmhouse

The store in Kamisato Kuroda, Iida City, is a relocated and restored old farmhouse roughly 130 years old. Choose products while enjoying tastings of miso soup, amazake, and pickles — and join occasional miso warehouse tours and gallery events.
