The history of Mitsutake Shuzojo began in 1688 (Genroku 1), when the brewery was entrusted with sake brewing to utilize the surplus rice of the Saga Nabeshima domain. In Hizen Hamashuku — known as a "Sake Brewery Street" lined with breweries — it has continued to brew sake alongside the daily life of the region.

The words it upholds are "sake brewing is people building." Beyond passing down techniques, it has valued the growth of each brewery worker while actively investing in equipment and developing new products. With "innovation within tradition" as a keyword, it continues to take on sake brewing that matches the times.

Using sake-brewing rice grown together with contract farmers in Saga, and sake-brewing rice varieties such as Yamadanishiki and Gohyakumangoku, brewing is done with underground water from the Tara mountain range. By sparing no effort from koji making to fermentation management, the brewery achieves a flavor that combines the natural umami of rice with a clean finish.

With a lineup you can choose by scene or preference — the black koji sweet potato shochu "Makai e no Izanai," the sake "Mitsutake" and "Kinpa," the Japanese GIN "Aka-Torii," the bold sake series "Kimagure Dragon," and collaboration bottles with popular anime — the appeal is its variety.
