Why We Love It

If you're looking for "rich, sweet soy sauce," I absolutely recommend this! The depth of umami in soy sauce aged over a year — by a long-established brewery in Yamaguchi continuing for over 100 years and hand-making from the koji stage — is different. Especially the flagship "Gouka Shoyu" lives up to its name with a rich taste. The "for tamago-kake-gohan only" and "for yakisoba only" pinpoint specialty products are also fun — guaranteed to liven up table conversation.

PROFILE About the Company / Workshop

Kawamura Shoyu was founded over 100 years ago. In Asae, Hikari City, Yamaguchi Prefecture, the brewery has built its path as a soy sauce maker supporting local dining tables. Even as food culture diversifies with changing times, the brewery centers on "soy sauce making committed to umami" — meeting wide-ranging needs from home to professional use.

The company's soy sauce is characterized by koji and moromi prepared in-house, carefully aged over a year. Using Hikari's clean water as brewing water and growing it slowly under an environment suited to fermentation, the brewery draws out complex, deep umami and aroma. While valuing such handwork, the brewery also puts effort into quality control and hygiene — delivering seasonings you can use with peace of mind.

In recent years, the brewery has continued developing "specialty soy sauces" for specific dishes — such as tamago-kake-gohan soy sauce and yakisoba soy sauce — along with seasonings like miso, dashi, tsuyu, and ponzu. Through recipe sharing and active social media presence, the brewery cheers on home cooking for younger generations and Yamaguchi regional cuisine — aiming to be a soy sauce brewery that accompanies future dining tables.

In-house brewing aging koji and moromi over a year

From koji making to moromi fermentation and aging, everything is performed in-house — slowly resting for over a year to draw out deep umami and aroma. The method that doesn't spare effort supports home cooking with extra deliciousness.

A mellow flavor born from Hikari's water and climate

Under the warm Setouchi climate, clean local water is used as brewing water. As a soy sauce brewery rooted in the region, the brewery continues making soy sauce and seasonings with mellow flavors that leverage the character of the land.

A "Specialty Shoyu" series you can choose by use

Many use-specific soy sauces are offered, chosen by dish — sashimi, tamago-kake-gohan, yakisoba, and more. The proposal-style lineup of "this one for this dish" makes daily menu planning enjoyable.

A product range extending from miso and dashi to gifts

Miso, ponzu, tsuyu, dressings, and gift sets — seasonings beyond soy sauce are also abundant. Assortments loved both for home use and as seasonal greetings or souvenir gifts are available.
