Why We Love It
The common sense that "all konnyaku is the same" is overturned. "Raw konnyaku" made from raw potatoes has zero alkaline smell, with a plump texture like sashimi! Satou Shoten started konnyaku manufacturing in 1958, became incorporated in 1989, and has continued for over 60 years solely with konnyaku as a long-established shop. Currently based in Shonai-cho, Yufu City — home to the tourist area of Yufuin — the company has the face of a local konnyaku shop, while also delivering products nationwide and even overseas.
For ingredients, the company uses domestic konnyaku potatoes centered on those from Gunma Prefecture, while also using konnyaku potatoes from Oita and Hiroshima and self-grown konnyaku potatoes for some products. By procuring only radiation-tested ingredients and establishing traceability, the company thoroughly considers safety. With the Food Safety Management System FSSC22000 certification, the company values being "konnyaku you can eat safely every day."
The signature "Satou Shoten Konnyaku (raw konnyaku)" — without holding inventory, prepared fresh daily and slowly cooked using a boiling method — combines softness, elasticity, and flavor penetration. With no need for parboiling (alkaline removal) and easy to handle, it is active in a wide range of dishes — simmered, grilled, sashimi, and even dessert.
