Why We Love It

This steak knife taught me the importance of "cutting without damaging the fibers of the meat." Just drawing the knife across the plate and the food parts cleanly — a feeling that gives you goosebumps. The "Damascus steel" knives forged by artisans who carry on the tradition of Echizen forged blades are sharp, of course, but the beauty of their wave pattern is artistic too. A lifelong blade that heightens the joy of cooking and the joy of eating to the extreme.

PROFILE About the Company / Workshop

Founded in 1953 (with origins in 1901). Through an integrated system of forging, hardening, sharpening and finishing cultivated in Echizen, it earns high praise from chefs and users at home and abroad.

At the directly managed "RYUSEN FACTORY & STORE" (Echizen City, 10:00–17:00), you can check cutting performance, make purchases, take part in workshops and more.

The techniques of Echizen forged blades

Against the backdrop of forging skills carrying on a 700-year lineage, heat treatment, sharpening and finishing that draw out the characteristics of the steel.

Direct store & maintenance

Test-cut and purchase at the directly managed store in Echizen. After-care re-sharpening and maintenance guides are also well provided.
