Sobokuni Chiffon began with the simple thought of "wanting to make nutritious snacks." Focusing on the nutritional value and aroma of buckwheat, from the idea of "if we made chiffon cake with 100% buckwheat flour, wouldn't it be incredibly delicious?" the brand took on the rarely attempted challenge of making 100% buckwheat chiffon.
Reality was a string of failures — not rising, drying out, losing shape — exceeding 500 trials. Even so, by continuing trial and error without giving up, the brand established an original method that could only be reached precisely because of being inexperienced — and became able to bake stably delicious chiffon cake.
After preparing a manufacturing factory and investing in commercial ovens and mixers, the brand opened a specialty store in Niidazuka, Fukui City in 2023. Even after introducing machines, the brand continues to finely review processes and formulations — updating deliciousness even further than at opening, while continuing "pesticide-free buckwheat flour × additive-free" sweet making.
Currently, in addition to 100% buckwheat chiffon cake, the lineup has expanded to buckwheat gateau chocolat, raw gateau chocolat, lemon cake, and German cake. Through gift boxes and online mail order, the brand delivers "body-friendly snacks" from the Fukui workshop to dining tables nationwide.
