Oga Kobo
A workshop for soft-flavored sea salt and shio koji, born from the seawater of the Oga Peninsula.
Using seawater from Akita's Oga Peninsula as the raw material, the workshop slowly cooks sea salt "Oga Namahage no Shio" in flat kettles, and also produces the "black salt" baked inside moso bamboo, plus fermented seasonings such as shio koji and salted lemon. From daily meals to gifts, the workshop continues making simple seasonings that draw out ingredient flavors.

The Oga Peninsula on the western edge of Akita Prefecture is known as a cape jutting into the Sea of Japan, long supported by rich fishing grounds and ocean bounty. Oga Kobo is a workshop that uses seawater drawn from this sea to make salt and fermented seasonings.
For salt making, the workshop uses flat kettles developed in-house. Concentrated saltwater is spread in large shallow kettles and gently heated without boiling, growing crystals without stress. Salt completion takes several days, influenced by weather and seawater conditions — but the result is a salt with mineral character yet edge-free softness in flavor.
The "black salt" — packed into moso bamboo and baked in the in-house charcoal kiln — is a flagship product taking even more time and effort. With added fragrance and a unique richness, it's chosen as finishing salt for meat and fish dishes. The track record of winning the METI Minister's Award at the "Village Revitalization Specialty Product Grand Prix" hosted by the National Federation of Small Business Associations is one indicator of its quality.
In recent years, the workshop has put energy into salt-centered product making — shio koji, spice salt, salted lemon candy, miso using Oga salt, rice, and more. "Oga Namahage no Shio" is a sea salt made using only seawater from off the Oga Peninsula jutting into the Sea of Japan — slowly cooked in proprietary flat kettles over time. By heating gently without boiling and finishing as delicate flake-form crystals, the salt achieves smooth dissolving and a gentle, edge-free saltiness.
"Black salt" baked in moso bamboo — a method that doesn't spare effort
"Black salt" is a baked salt where Oga Namahage no Shio is packed into moso bamboo tubes and further slowly baked in a proprietary charcoal kiln. By finishing with double and triple effort, fragrant aroma and deep umami are born — making it a piece well suited as finishing salt for steak, grilled seafood, and tempura.
Shio koji, salted lemon candy, and a lineup leveraging fermentation and salt
Beyond sea salt, the workshop offers a shio koji series ("Shio Koji Basic," "Shio Koji Garlic," "Shio Koji Onion"), wooden-vat miso using Oga salt, and "Teshio ni Kaketa Shio Lemon Ame" — combining its in-house salted lemon with lemons from Osakishimo-jima in Hiroshima.
