Aritsugu was founded in 1560 — the Eiroku 3rd year — when master swordsmith Fujiwara Aritsugu began forging blades for the Imperial Court in Kyoto. Over 460 years later, that same lineage of craft produces the kitchen knives, copper pots, and cooking tools found in the Nishiki Market shop in the heart of Kyoto's food district. "Tools made with one's whole heart" — this founding spirit has never changed.

PROFILE Company & Brand Story

Aritsugu's history begins in 1560, when swordsmith Fujiwara Aritsugu — a disciple of the grand master of Japanese smithing, the Mishina school — established his forge in Kyoto's Kajiya-cho (Blacksmith Quarter). Serving as an official bladesmith to the Imperial Court, he forged swords under ritual purification for the Emperor's use. The workshop's credential to enter the Imperial Palace grounds was a distinction held by very few craftsmen.

As Japan's peaceful Edo period reduced demand for swords, Aritsugu shifted its craft toward practical blades: small knives for Buddhist sculptors, then kitchen knives for Kyoto's growing culinary culture. By the Meiji era, the forge had expanded into hammered metal pots — aluminum, copper, and brass — using the same metalworking techniques developed for sword-making.

In 1981, Aritsugu opened its Nishiki Store in the famous Nishiki Market — "Kyoto's Kitchen" — where chefs and home cooks can handle the real tools before buying. Today the store stocks knives (santoku, gyuto, yanagiba, deba, and more), hammered pots, copper molds, and ginkgo cutting boards. Every product can be sharpened and repaired by Aritsugu, keeping them in service for a lifetime.

The brand's philosophy is unchanged after 460 years: "Good tools enrich the heart, and raise the skill of the hand." Aritsugu remains one of the few places in Japan where a customer can commission a knife, have it engraved with their name, and bring it back for sharpening every year for the rest of their life.
