Misono (ミソノ刃物)
Japan's definitive professional chef's knife. From the blade city of Seki, Gifu.
Misono Hamono is a Seki City, Gifu knife maker focused entirely on professional Western-style knives — gyutou, sujihiki, petty, and more. Founded in the city that has produced Japan's finest blades for over 700 years, Misono combines traditional heat treatment and hand-sharpening with precision modern manufacturing. The flagship UX10 series — Swedish high-grade stainless with an exceptionally thin grind — has earned a devoted following among professional chefs in Japan, Europe, and North America.
PROFILE Company & Brand Story
Misono Hamono is rooted in Seki City, Gifu — a city whose blade-making heritage stretches back 700 to 800 years, to the same tradition that produced the legendary "Seki no Magoroku" swords. In this city of cutlers, Misono carved out a distinct identity: a specialist in professional Western-style knives, made for the demands of restaurant and hotel kitchens.
Production is conducted almost entirely in-house. Steel selection, forging, precision heat treatment, hand-sharpening, and final edge-setting are all performed by Misono craftspeople in their Seki facility. This end-to-end control allows the brand to optimize each step for professional-grade performance — sharpness that holds, edge geometry that cuts cleanly without tearing, and a balance suited to the long sessions of a working kitchen.
The UX10 series, made from high-grade Swedish stainless steel, is Misono's most celebrated line. It offers the sharp, clean bite of high-carbon steel with the corrosion resistance of stainless — a combination that professional chefs have long sought. Below UX10, Misono offers the Swedish carbon steel series, the molybdenum-vanadium MV series, and the accessible Misono 440 stainless series.
Feedback from professional cooks worldwide has shaped Misono's knife geometry over decades. The knives are not optimized for YouTube sharpness tests — they are optimized for hours of use in a professional kitchen, day after day, year after year. This kitchen-first philosophy has made Misono one of the most trusted brands among career chefs globally.
UX10 — Swedish High-Grade Stainless
The UX10 series uses premium Swedish stainless steel — heat-treated to hold a sharper edge than standard stainless, with exceptional rust resistance. It is the knife many professionals buy once and use for the rest of their career.
Seki City — 700 Years of Blade Tradition
Seki has been Japan's blade-making capital since the samurai era. Misono's production inherits centuries of accumulated knowledge about steel, heat, and edge geometry — refined in this single city for over seven centuries.
Professional Western-Style Range
Misono specializes in Western-style knives for professional use: gyutou (chef's knife), sujihiki (slicer), petty (utility), boning knife, and more. Each blade type is engineered for the specific cutting motion and kitchen application it serves.
